Monday February 13 is our 18th anniversary. When we opened our doors for the first time, Prime Minister Brian Mulroney was putting the final touches on the Free Trade Agreement. Well, time has flown by almost as quickly as Ben Johnson’s ill-fated sprint in the 1988 summer Olympics. We are now on our fifth Prime Minister and hope to see at least another before we pack away the pint glasses for good.

With pledges to phase out dirty coal and the potential for costly, unsafe nuclear energy to take its place, what will be the overall impact on our environment, economy and quality of life? How can we ensure that future generations, low income families and small businesses benefit from the actions we take?

Jack Gibbons, Chair of the Ontario Clean Air Alliance, has some answers. In presenting the OCAA’s ground breaking new report, A New Electricity Strategy for Ontario – increasing productivity and moving towards a renewable future, Mr. Gibbons will speak to the benefits of focusing on “rewarding efficient energy use instead of subsidizing inefficient consumption” and the pathway to a prosperous, productive and competitive future for the residents and businesses of Ontario.

With some help from our winemaker, Angelo Rigitano, we will be heading back through fourteen years of history on Wednesday February 15. We will look through our wine cellar in search of some answers to the question of aging wine. How long is long enough and how old is too old?

Featured cellar wine includes: 1992 Chardonnay, Lenko Vineyard (Intervin Silver); 1993 Riesling, Lenko Vineyard; 1994 Riesling, Lenko Vineyard; 1995 Cabernet Franc Merlot, Shoemaker Vineyard (Intervin Bronze); 1996 Zinfandel (California); 1997 Merlot, Jakymiw Vineyard; 1998 Cabernet Franc Merlot, Vail & Jakymiw Vineyards.

Contemporary comparison provided by: Lakeview Cellars 2003 Riesling; Silver Peak 2004 Chardonnay, Barrel Fermented; and Silver Peak 2003 Merlot.

The tasting will commence at 7 p.m. Tickets are available in advance for $20 (all taxes and charges included) online.

Our annual tribute to Scottish good taste on Wednesday January 25, 2006 delved into the question: What's In The Wood? From traditional sherry casks to Port, Burgundy, and American bourbon casks, single malts spend a lot more time aging in a barrel than in the still or in your glass.

The tasters that assembled at C'est What that evening seemed impressed with the difference that the right aging vessel can make. There was a clear preference for wine casks, Port in particular. The otherwise highly regarded with the Glenmorangie Port Wood Finish coming out on top. The Macallan brand suffered the lowest score for their combination sherry and bourbon casked whisky.

radioBeer List Update

Since we opened in 1988 it has been our mandate to showcase "True Local Flavour." With the formation of the association of Ontario Craft Brewers (OCB) we have made the commitment to offer our customers at least one brand from each member brewery as long as the brew meets the standards set out in our Craft Beer Manifesto.

This month's additions to our draught list include Niagara's Best Blonde, Trafalgar Downrigger Bock, and Black Oak Pale Ale (dry-hopped cask version).

Music-making, creative inclusion, and fun is at the heart of this weekly Sunday night event. C'est What's Next has no doubt turned into the best original songwriters'-invited stage in Toronto.

T T & D's Only Night has taken in a loose group of performers and musicians and shaped the event into a fledgling community where bands are formed, writers connect with other musicians, sidemen sit in for an evening of jamming, special surprise guests drop by and presto... after three years running; a scene is born!

Highlights from the past few months include appearances by Andy Kim, Ron Sexsmith, Don Kerr, Lindy, Blair Packham and many others with regular mini-sets by Jerry Leger & the Situations, Remote Wonder, Synthetic Folk Hero and countless other bands dropping in to see what's going on.

Terence, Tim and Derek continue their weekly Sunday night show throughout February. Show time 9:30, Admission free!
